Did the great composers of the past (Bach, Mozart, Beethoven, etc.) compose by hand or sitting at the piano?

Basically, did they sit around outside in a garden, for example, composing using their inner ear on a piece of paper, or did they sit by a piano, playing around with ideas, and then notate what they were playing?
